The Tastes from Home with Frito-Lay - Super Angelfood Cake Delight + Giveaway! (US ONLY) 8/25/11

I wanted to share a great recipe for any time of year that is super easy to make and affordable. When I was first out of high school, away at college, on my own for the first time, being invited to picnics back home was awesome. However, now I had to bring the covered dish or snacks, instead of mom and dad. This was something I came up with after seeing something similar on a cooking show, but I simplified it way down with less ingredients making it more homey! I am originally from literally "The Smallest City in the USA", Parker, PA. Where everyone knows everyone, and you always make your best recipe everyone loves to take to the picnic, no matter how grand or simple. My family is from Pittsburgh, PA, and now I live in Butler, PA, which is a semi small town itself, I am used to both country life and city life. I do however, miss that small town I called home for so many years, Parker.

Super Angelfood Cake Delight

Ingredients:
Pre-made Angelfood Cake from Supermarket (or you can bake your own in a round pound cake pan)

1 Container Whipped Topping

Vanilla Instant Pudding (Small Box)

1 Can Crushed Pineapple

Fresh or Frozen Berries (I always get frozen and add a little sugar and shake it in a bowl with a lid gives the berries a nice berry/sugar sauce!)

Instructions:
Take the angelfood cake and slice it into 3 whole circle sections. Mix the whipped topping, pudding mix, and crushed pineapple (leave juice and all) in a large mixing bowl. Take mixture and refrigerate for about 15 minutes. Stir, then apply to bottom layer of angelfood cake, add the second layer and cover with mixture, same with the top layer. Add fresh/thawed frozen berries fruit to the top for garnish. Serve in slices with the mixture of frozen or fresh berries and sugar sauce on top.

Variation: Cut angelfood cake into cube shapes and place a layer in a see through pan/bowl etc... then a layer of berries and a layer of the mixture of whipped topping, pineapple, and pudding - then a layer of angelfood cake cubes, and repeat (it will look like a parfait). Use extra berries for added topping if guests wish.
